Need a quick healthy dessert. It is so pretty to look at, just makes you want to eat it. Don’t feel guilty as it has healthy coconut fat, and antioxidants from the the berries. Enjoy!
Berry Delight

½ c. raspberries, fresh ½ c. strawberries, fresh, sliced ¼ c. blueberries, fresh 2 T. coconut manna mint leaf
Wash all fruit, pat dry. Place all fruit in glass dishes, layer the fruit alternating with coconut manna. Garnish with a mint leaf.

Thanksgiving would not be complete without pumpkin pie and this is a good one!
Pumpkin Pie

1 (15 ounce) canned pumpkin puree 3 eggs ½ c. coconut milk ½ c. honey 1 T. ground cinnamon ¼ t. ginger, ground ¼ t. cloves, ground 1 t. nutmeg ⅛ t. celtic sea salt 1 pie crust
In a food processor or large mixing bowl, combine pumpkin, and eggs. Add coconut milk, honey, spices, and salt. Pour filling int unbaked nutty pie crust . Bake at 375 degrees for 45-60 minutes. Allow to cool then refrigerate.

This is a very easy pie crust, just be sure to not overcook the crust. It’s gluten free, dairy free, and grain free. Credits to [i]elanaspantry[/i]. This was a favorite on Thanksgiving.
Paleo Pie Crust

Recipe type: Sweet Treats
2 c. almond flour ( I like blanched) ¼ t. celtic sea salt 2 T. coconut oil or palm shortening 1 egg
Place the flour and salt in food processor or mixer and pulse briefly until pea sized pieces. Add oil and egg, and pulse until it forms a ball. Press dough into a 9 inch pie plate. Bake at 350 degrees for 8-10 minutes. Add filling. For pumpkin pie filling, do not bake crust first.
